Grilled Summer Fruits with Mascarpone Cream and Honeyed Pistachios

Bounty of summer in a platter! Sweet summer fruits grilled and served with mascarpone cream and salted pistachios,honey, olive oil and pomegranate molasses.

If you haven’t tried grilling fruits, then please cancel all your weekend plans and do it this Saturday! Ok ….just kidding:) But, you seriously have to try it! Grilling makes the fruit much more sweeter. You don’t want to cook them for a long time, a few minutes does magic! It warms up the fruit, natural sugars begin to caramelize and takes a humble fruit to an entirely new level. This is a great way to use up not so ripe fruits or may be the less sweet ones.

This recipe is a celebration of summer! Into mid August, markets are just overloaded with sweet fruits. What a great way to enjoy them at the next barbecue. I had these for dinner and called it a day!

There is no real recipe needed here. Cut fruits into thick wedges, place on a outdoor grill or a stove top grill pan, Cook for a few minutes until grill marks appear, flip and cook on the other side.

Let us look at the options…

…..all stone fruits are great candidates, cut small ones in half and large one into thick wedges

……cut mangoes in half and leave skin intact. If you have a not so ripe one, then peel off skin

……cut watermelon into wedges

…..pineapples are wonderful too, I didn’t have one on hand

…..berries are too soft to be grilled, I served some along with grilled guys

Ripe but firm fruits, are the best for grilling! One of my plum was slightly soft and didn’t mark  on the exterior. Can you spot that guy in the picture?

Grilled Summer Fruits with Mascarpone Cream and Honeyed Pistachios

Ingredients:

Different types of summer fruits  like peaches, nectarines, plums, mangoes, watermelon and  strawberries

Mascarpone cream:

1/2 cup mascarpone

1 cup heavy whipping cream

1/4 cup coconut sugar

Honeyed pistachios

1/2 cup salted roasted pistachios, coarsely chop

1/4 cup extra virgin olive oil

1/4 cup honey

2 tablespoons pomegranate molasses

1/8 teaspoon salt

Preperation:

To grill fruits,
Cut all fruits into thick wedges. Berries can be served as is.

Preheat grill or a grill pan until hot. Spray lightly with non-stick cooking spray. Place pieces of fruit, grill for 2-4 minutes until grill marks appear. Turn over and cook the other side. Remove onto a serving platter.

To make mascarpone cream,

Combine all ingredients in a medium bowl, beat with  a hand held electric beater until thick. Store in a covered container in the refrigerator until serving time.

To make honeyed pistachios,

Stir all ingredients together.

To serve,

Serve hot grilled fruits with cold mascarpone cream and honeyed pistachios.
