Margarita needs no introduction ! Strawberries added to the drink results in a delicious twist. All the components of this south of the border drink has made into a crunchy treat. Mucho delicioso!
The pink cookies are flecked with freeze dried strawberries. There is tequila in both cookies and glaze, reinforcing the boozy effect!
Strawberry Margarita Cookies
1 cup all purpose flour
3/4 cup freeze dried strawberries
1 teaspoon freshly grated lemon zest
1/2 cup confectioners sugar
1 stick unsalted butter
2 tablespoons tequila
Lemon Tequila glaze
3/4 cup confectioners sugar
1 tablespoon freshly squeezed lemon juice
1 tablespoon tequila
To make Strawberry Margarita Cookies,
Add first 4 ingredients to a food processor , process until strawberries are finely ground. Add butter and tequila and process until the dough comes together. Do not over process.
Shape dough into 8 inch log , wrap in parchment, place in refrigerator for 2 hours to overnight.
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
Slice dough into 1/4 inch thick slices, place in prepared pan , spacing evenly and bake for 30 minutes, rotating pan once during baking.
Cool pan on a wire rack to cool completely.
To make Lemon Tequila glaze,
Whisk together all ingredients until smooth. Drizzle over cookies and let set.
Makes 22-25 cookies
