Banana-Nut Brownie Muffins


A fudgy brownie with a tall  glass of milk is any child’s dream or an adult for that matter! With so many variations from cakey, fudgy, chewy… brownies are so much more than just an after milk treat. But, what would happen if one adds mashed bananas into the equation?  Taking it one step further , I played around with the proportions to make a love child of  banana nut muffin and brownie! No mixers required!

As for a banana bread, a super ripe banana works well. To toast nuts, place nuts in a baking sheet and bake in preheated 325 degree oven for 10-15 minutes until lightly golden and you can smell them. Cool completely.


3/4 cup semi-sweet chocolate chips

1 stick unsalted butter, room temperature

1/2 cup all purpose flour

1/4 cup + 1 tablespoon sugar

1/2 teaspoon baking powder

1/8 teaspoon salt

1 large egg, lightly beaten

1/2 cup mashed banana, about 1 large

1/2 teaspoon vanilla extract

For topping:

1/2 cup mixed toasted nuts, such as cashews, walnuts, pecans, slivered almonds

1/3 cup semi-sweet chocolate chips



Combine 3/4 cup chocolate chips and butter in a large microwavable bowl, microwave for 1 minute (stirring once in between) , remove from microwave , stir well until completely melted and smooth. Set aside for about 15 minutes to cool slightly.

Preheat oven to 350 degrees F. Line a muffin pan with 8 paper liners.

Whisk together flour, sugar ,baking powder and salt in a small bowl and set aside.

Whisk together egg, mashed banana and vanilla extract into the melted chocolate. Add flour mixture and whisk until just combined and smooth. Divide batter into the prepared muffin cups and bake for about 20 minutes. A toothpick inserted in the middle should come out not too clean (we want to bake these slightly under done just as you would a brownie). Cool pan on a wire rack .

Melt 1/3 cup chocolate chips in a small microwavable bowl for 50-60 seconds(stir once in between), remove from microwave, stir until completely melted and smooth. Spoon into a small ziplock bag, seal and snip off the corner.  Place about a scant tablespoon of nuts on each muffin, drizzle melted chocolate over, let sit at room temperature until chocolate has hardened.

Makes 8 muffins
